Some bacterial strains used in fermented foods and supplements actively produce histamine as a byproduct. Others — certain Bifidobacterium longum and Bifidobacterium animalis strains among them — are associated in research with lower histamine-related symptoms. A generic "probiotics are good for you" approach can backfire here.
