Histamine intolerance is almost never about one bad food. It's about total load — everything pouring in, against how fast your body can drain it back out.

Diet, stress, and alcohol all pour into the same tank. Your genetics — mainly two enzymes, DAO and HNMT — set how fast it drains. Symptoms show up when the tank overflows, not necessarily from any single trigger.

Two Enzymes, Two Different Jobs

Almost everything in this guide traces back to these two. Learn them once, the rest makes sense.

DAOGene: AOC1

Breaks down histamine from food

Diamine oxidase works in your gut lining, breaking down histamine that arrives through what you eat before it gets absorbed into your bloodstream. Low DAO activity is the classic driver of food-triggered symptoms — headaches, flushing, hives, digestive upset after a meal.

Genetic variants in AOC1 are strongly linked to how much DAO your body actually produces.

HNMTGene: HNMT

Breaks down histamine made inside you

Histamine N-methyltransferase works inside your cells, including in the brain, clearing histamine your own body produces — during an immune response, a stress reaction, or normal cell signaling. This pathway matters even on a low-histamine diet.

Variants here are more associated with histamine issues that don't track cleanly with food at all.

Your body builds histamine from histidine — the same essential amino acid flagged in the Protein Codex. One amino acid, one decarboxylase enzyme, and you've made histamine. The two enzymes above are what clear it back out.

Histamine builds up through fermentation, aging, curing, and time. The older or more processed, generally the higher.

Yes, This Contradicts the Gut Codex — On Purpose

Kimchi, sauerkraut, kefir, and miso all scored well in the Gut & Fermentation Codex for live cultures and gut health. They're also sitting in the list above. Both things are true at once. Fermentation is generally excellent for your microbiome, and fermentation is also how histamine builds up in food.

If you're not histamine-sensitive, the gut benefits likely outweigh this entirely. If you are, this is exactly the tradeoff worth knowing about before you load up on fermented foods for gut health and can't figure out why you feel worse.

These foods don't necessarily contain much histamine themselves — they trigger your own mast cells to dump stored histamine. Different mechanism, same symptoms.

Not All Probiotics Are Equal Here

Some bacterial strains used in fermented foods and supplements actively produce histamine as a byproduct. Others — certain Bifidobacterium longum and Bifidobacterium animalis strains among them — are associated in research with lower histamine-related symptoms. A generic "probiotics are good for you" approach can backfire here.

If gut work is part of your protocol and histamine is a concern, strain selection matters more than usual.

One high-histamine meal rarely causes symptoms on its own. It's the accumulated load across a day or week that tips you over threshold.

Fresh over leftover, always

Histamine keeps building the longer food sits — even refrigerated. Cook what you'll eat that day, or freeze it immediately instead of storing in the fridge.

Know which mechanism you're dealing with

A high-histamine food and a liberator food cause the same symptoms through different routes. If elimination isn't working, you may be tracking the wrong list.

Stress counts as much as the plate

A stressful week can turn a normally-fine meal into a reactive one. If symptoms don't track cleanly with food, look at what else was going on that day.
